Easy 3-ingredient vegan recipes

Sometimes I come home to only 3 ingredients in the fridge, or only 3 brain cells left in my brain. Having been vegan for three years now, I’ve learnt that the myths of “vegan food is so complicated” and “vegan food is so expensive” are completely false 😉

Here are five 3-ingredient recipes that are great for beginners and vegan veterans!

No-Bake Brownies

  • 1 cup walnuts
  • 1/2 cup cocoa powder
  • 12 medjool dates

Blend in a food processor or blender, adding 2-3 dates at a time to avoid clumping. Refrigerate overnight for best texture, and top with cocoa nibs or almonds if you’re feeling fancy.

Banana Oatmeal Pancakes

  • 1 cup oats
  • 1 banana
  • 1.5 cups non-dairy milk

Blend all ingredients in a blender or food processor, then cook in a well-oiled pan! Sprinkle blueberries or chocolate chips over pan for an added effect.

Vegan Parmesan Cheese

  • 3/4 cup cashews
  • 3 tbsp nutritional yeast
  • 1/4 tsp garlic powder

Pulse in a food processor or blender until you get nice little flakes or crumbs. Add salt to taste and serve on pasta, salads, and avocado toast!

Chocolate Peanut Butter Smoothie

  • 2 frozen bananas, chopped
  • 2 tbsp peanut butter
  • 2 tbsp cocoa powder
  • 1 cup non-dairy milk (okay this 4th ingredient is a given for smoothies)

Blend in food processor or blender and drink while cold! Use a reusable straw for extra points.

Red Curry Pasta

  • 2 tbsp natural peanut butter
  • 1 tbsp Thai red curry paste
  • 1-2 tbsp water

Combing ingredients and add the 1-2 tbsp of water to thin out the sauce. Cook up your favourite bowtie or shell pasta, and combine with sauce in the cooking pot. Salt to taste and garnish with cilantro or a squeeze of lime
